WHere is a simplified version of a beverage found on our latest cocktail list. It's a party-sized premix which is bursting with the essence of a Christmas time, which makes it perfect for a celebration. Save the extra citrus syrup for brunch beverages, sweets, or for additional servings of the drink.
The Bikini Cocktail
Makes enough for 10 guests
To make the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Cocktail (makes 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (as made above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Instructions
For the Citrus Syrup: Combine the listed components into a saucepan, bring to a simmer, stirring so the sugar melts. After that, turn off the stove and let it to cool completely. Pour into a sterilised bottle, cap it and refrigerate it in the fridge, it can be stored for up to a month.
Preparing the Premix: Combine all the liquids in a sizeable container, leave to sit for 60 minutes, then pass it through best through cheesecloth, making it fully clarified.
When ready to serve: Measure 85ml of the cocktail base to a cocktail shaker packed with ice, and stir gently for a minute until cold. Strain to a frosted cocktail glass or equivalent, decorate with the cranberries and complete it using a light spray of the essential oil over the drink.
